Peer Pressure Pumpkin Chili

I’ve been seeing lots of pumpkin recipes all over. I’m sorry to say that although they all look good, I am not really a fan of pumpkin. Please don’t ban me from the blogosphere! I want to be open to trying new things, and maybe there’s a little bit of peer pressure, so I bought four cans of organic pumpkin puree. I read about people hoarding cans and stores running out, so I figured I should get plenty just in case I liked it.

I didn’t grow up eating pumpkin pie at Thanksgiving. My mom would make pumpkin cheesecake. Instead of venturing into that (maybe later!), I decided to make pumpkin chili like I get at Loving Hut. Mine was much chunkier and it turned out really well. I combined so many recipes that I’ll share what I did, as I do consider it my own.

Ingredients:

  • 1 sweet potato, diced
  • 1 sweet onion, chopped
  • 15 oz. diced tomatoes
  • 15 oz. pumpkin puree
  • 1/2 cup dried chickpeas, soaked and simmered
  • 1/2 cup dried kidney beans, cooked
  • 1/2 cup bulgur
  • 1 cup water or broth, or more, for desired consistency (I used the sweet potato boiling water)
  • 2 Tablespoons chili powder
  • 1/2 teaspoon pumpkin pie spice (or small amounts of nutmeg, cinnamon, ginger, and allspice)
  • A shake of cayenne, or more if you like it hot. Chipotles or fresh peppers might be good here, too.

Method:

This was pretty simple. My beans were prepared, so I boiled the sweet potatoes and sauteed the onions, then just combined everything else and cooked until heated through and the bulgur is done.

I wanted to take photos of the cooking in-progress, but unless you need to see my chopped onions or my sweet potato cubes, this is pretty much it. This was a quick and easy chili that was delicious. I like the two kinds of beans and the sweet-heat, as well as the chunks of sweet potatoes.

  2. I could easily be peer pressured into trying this chili.

    I love pumpkin pie. Loooove it. I have a very one-track pumpkin mind. When I see a can of pumpkin, all I can think about is pie.

    I did also recently make pumpkin muffins, and those were good, too.

  4. i literally just ate a bowl of 'pumpkin oats' and was so not impressed.

    going to use the rest of the can in muffins which i hope i'll be able to stomach!

    i do love black bean pumpkin soup though. your chili looks awesome!

  5. I think it looks great. I'm not big on pumpkin either though so I've felt a little bad not using any this fall. My big risk was using a recipe that called for pumpkin seeds...yeah, thats not gonna happen again. But your chili looks so good, so maybe itll be my 'gateway' dish! :)

  6. it can be scary to admit you don't *love* pumpkin around these parts! :) i'm with you. but i think your recipe sounds a little on the savory side, which i totally dig.

  7. Love the sound of your chili and it looks fabulous too. :-)

    I love to use pumpkin in many ways. It is a good filling for ravioli, makes a nice smoothie, and I also love it in risotto. In my unhealthy days I also used to make pumpkin pancakes and pumpkin fudge. It can be very versatile.

  8. hmmmm...pumpkin in chili...I would have never thought of that. I will have to give that a try sometime.

    I love pumpkin bread, but haven't made any this year...yet. Hopefully I will get to this weekend though. I do love pumpkin and would do more with it, except for Tony isn't up for all the "weird" concoctions that I mention...ha
    I would love to make some pumpkin pancakes, but I got a snarled nose when I mentioned that...lol I'm glad you gave into the peer pressure. :o)

  9. Great post. I've done more with pumpkin this season than ever. Cinnamon rolls. chocolate pumpkins, smoothies, etc. It has been fun and delicious!

  10. I could sort of take or leave pumpkin too. But this chili looks really good, and I can imagine pumpkin going perfectly with chili ingredients.

    My favorite thing to do with pumpkins is carve them...for cooking, I usually go for other types of winter squash.

    Though...pumpkin cinnamon rolls do sound intriguing.

  11. other people hoard canned pumpkin besides myself?! this means i need to get my butt in gear and get more cans of it. ahahhahhaaa! i'm a big fan of more than uno type o' bean in a chili - and your pumpkin chili looks amazing! i'm kicking myself for not having tasted or made pumpkin chili before. so awesome on giving pumpkin another chance - and i'd love to hear your thanksgivine cheesecake story sometime, too. my favorite way to enjoy pumpkin: pumpkin pie smoothies. mind blowing. seriously.
