Happily Inspired

I saw this General Tso Tempeh earlier this month. Then I saw it again. Then I made it, and I’m glad I did.

I doubled the recipe and added baby corn, mushrooms, broccoli, and water chestnuts and topped it with green onions and sesame seeds. Yum!

  1. The recipe seems to be making the rounds! I love your addition of water chestnuts! I never knew what those were until fairly recently, but I love the crunch and neutrality they add to stir fries and such.
    If all "Chinese food" were like this, I'd eat it.

  2. do you know how long it's been since i've had general tso?! it feels like it's been a million years. now i'm kinda kicking myself for never thinking of making it, which means i'm totally gonna now. baby corn and all! mmmmmmmm! it looks incredibly awesome, Jessica!

  5. That definitely is a happy inspiration! I was yearning for that too when I saw the posts. I made the sauce and used it on tofu, but I really need to do properly with tempeh. I love your additions of baby corn and water chestnuts. It came together beautifully...a truly delicious looking meal.
