The beginning of winter and the end of Thanksgiving leftovers

You really can make anything into a patty. Getting patties to hold together was a serious challenge for me in the past, but now? Easy. Maybe I’ve finally learned how to be gentle.

When I read about the sweet potato and white bean patties Jenny was making, I knew I needed to give them a try. That, and I had six large sweet potatoes on the shelf and leftovers from Thanksgiving in the fridge. I needed a way to use up what I had and get some variety at the same time.

I used mashed sweet potatoes, cannelleni beans, bread crumbs, and some sauteed diced onions and garlic. I seasoned the mix with salt and garam masala and ate my patty with leftover collards. Alex ate his with ketchup.

We got our first snow this weekend, and I made homemade tomato soup for the first time. Tomato soup + sweet potato patties doesn’t sound like a lot, but it was a great meal on a cold night.

  1. I think tomato soup and sweet potato patties sounds amazing! I loooooove tomato soup and hopefully will be making lots this winter! I'm really starting to love the veggie bean patty thing though. Johanns the one who usually makes them but I like to eat them! We had Spagehtti et bean balls à la Vcon last night and if your a fan bean patties and whatnot give it a try.

  3. Tomato soup and sweet potato patties sounds like a really nice combo. And a great way to use leftovers with the patties. The snow is lovely. I think this time of year is good for the appetite.

    I think snow is so pretty...I love it, but that could be because we don't get very much here. :o)

  7. Nice looking sweet potatoes patties. I love making things into veggie burgers myself. In fact I need to make more now for the freezer. Thanks for reminding me.

    The snow is pretty. I think having tomato soup and watching the snow fall sounds perfect.

  11. ok good, hey, im not used to people getting my humor in "real" life so it takes me awhile to get used to friends that do!


    i had sweet potatoes in the pantry that i bought four days ago and they were bad! i was totally prepared to make this!grr those things usually last forever!!
